Email forwarding is a way to automatically resend any incoming emails for one account to another account (or even multiple accounts). This process does not change any of the emails FROM or original TO fields, so it will all appear as though the email was send directly to the second email account.
This can be helpful for families with multiple, young children who are not going to be reading their email themselves. Lets say we have a family with one learning coach, and three students. all three children are in Elementary school, and too young to read/reply to any of the messages from their teachers. Without mail forwarding, the learning coach has to log into his/her email, then also into each of the student's accounts. With Mail Forwarding set on the three student accounts, the learning coach can have all the emails land into his/her own inbox.
To make the directions a bit easier to follow, we are going to assume that we have one parent, with two students. The parent wants to have all emails land into his/her inbox. The email accounts are student1@mypavcs.org, student2@mypavcs.org and parent@mypavcs.org.
Now, any email sent to student1@mypavcs.org or student2@mypavcs.org will land into the parent's inbox, right along side the parent@mypavcs.org emails. For most, this is probably enough. If you want to make your replies also look like they are from student1@mypavcs.org instead of parent@mypavcs.org then you will want to set up Multiple Identities.
TIP: You can also use the forwarding feature to have a copy of your child's email sent to you. In the "Forward Emails To:" put student2@mypavcs.org, parent@mypavcs.org. This will send one copy to the student2@mypavcs.org inbox, and another copy to the parent@mypavcs.org inbox. Please note that since this is done in the student's account, and your student still has access to the account, then your student could undo your changes. If you are going to use the forwarding as a copy feature, then be sure you talk to your student about these changes before you make them.

Using the example above, our parent wants to reply to a teacher's email that was sent to student1. When the parent replies, the message the teacher gets will show as "FROM: parent@mypavcs.org". Our example parent wants the teacher to see the email as "FROM: student1@mypavcs.org". This will help both the teacher, and the parent keep things organized as what information pertains to which child. This is were setting up Multiple Identities comes into play.
Now when the parent replies to an email, the Squirrel Mail software will check the email address in the "TO:" field, and check that against the different identities. If it finds a match then it will use the matching identity.
The parent will also have the option to choose which identity they want to use when ever the compose a new email. When in the "composing" view, simply choose the desired identity with the dropdown in the "FROM" field.
